Elaboration

Agave is a fundamental element for the production of Don Julio tequila. It is grown in the mountainous area of ​​Atotonilco on the family farm. The aging of tequila occurs together with the maturation of the agave plants, that is, for seven years.

The harvesting of the plants is manual. The agave is cut from its roots and, subsequently, the leaves are cut into a spear shape. The result of this process is called piña and is the raw material with which tequila is made. The pineapples are destined for the Don Julio Distillery by truck, where they are cut into equal pieces so that they bake slowly for days evenly. Once baked, they are crushed and bathed in water, resulting in the famous agave juice, like a sweet syrup. Subsequently, yeast is added to the agave water and allowed to ferment. When this process is finished, a sweet and slightly alcoholic agave beer is obtained that is placed in stills, where it is distilled until tequila is obtained. Finally, it is placed in stainless steel tanks or bourbon barrels for aging, before bottling.

Tequila Don Julio 70 is an aged tequila with double distillation, after which it continues to maintain the woody touch of the barrel. However, once this process is completed, the fiery flavor of Blanco tequila returns but without burning.
