Elaboration

The process of making Mahou has always depended on the weather and access to the ingredients necessary to produce it. In this sense, Mahou-San Miguel beer has been able to adapt traditional techniques to new technologies that allow it to expand production and improve quality.

The initial step, and one of the most important, is the selection of the malt, depending on the type of beer, one or another will be chosen. Subsequently, the grain is ground to go on to macerate, where the grain is mixed with water to obtain the brewing wort.

Next, the filtrate separates the bagasse from the liquid wort, which is boiled. At this time, hops are added either in the early phase, to provide bitterness, or in the late phase to develop aromas. Boiling lasts around an hour, depending on the style of beer you want to make.

To develop fermentation they must cool the wort. To do this, they inject air to create the thermal conditions necessary for the yeast to work. This microorganism converts fermentable sugars into alcohol and CO2.

Finally, they decide whether to filter the beer or not. If filtered, a clear and bright beer is obtained, which can now be bottled.

History

Mahou was founded in Madrid in 1890 as Hijos de Casimiro Mahou, since they were in charge of developing the brewery, which was previously dedicated to other productions. Spain, which had always been a country with a wine-growing tradition, did not usually consume beer, a factor that highly benefited the appearance of this alcoholic beverage in the country.

During the 20th century, the brand was among the most important in the Spanish beer market. In 2000 the brand purchased San Miguel, becoming the Mahou-San Miguel business group, the largest Spanish beer company at the beginning of the 21st century.
