Preparation and aging

Regina Viarum Mencía 2022 has a maceration process for 72 hours at a very low temperature. The fermentation of this wine is at a controlled temperature, with “délastage” and daily pumping over at a maximum temperature of 28ºC, which allows all its color, aroma and complexity to be extracted.
