Psi 2022

Psi 2022 is a red wine from Ribera del Duero. A fresh red wine, with a lot of fruit flavor from the Dominio de Pingus winery.

Dominio de Pingus is a very small winery located 30 kilometers from Roa, in the province of Burgos. Its small production makes it one of the rarest and most exclusive wines in Spain.

Preparation and aging

Psi 2022 is made with 93% Tinto Fino, 7% Garnacha varieties. Alcoholic fermentation takes place in large cement tanks, followed by malolactic fermentation and aging in these same tanks. Peter Sisseck is Pingus, an agronomist and oenologist born in 1962 in Copenhagen, who has lived in Spain since 1990, making his wines among the most valued in the world since then.

The Dominio de Pingus winery was created in 1995 and it was a project that Sisseck had in mind for some time. He had previously worked with his uncle Peter Vinding Diers, one of the creators of the “new wave” of Bordeaux white wines, in the Graves area. Sisseck had previously worked in California, alongside the prestigious winemaker Zelma Zong, which was an enriching experience for both.

• View: Psi has a dark cherry color with a violet rim. Bright, clean and fluid, with dense tears.
• Nose: A wine with a clean and pronounced nose in which intense red fruit (strawberries, cherry, currants) stands out, the absolute protagonist, accompanied by subtle and elegant aromas provided by the wood, balsamic that refreshes and spicy and mineral touches that give it complexity.
• Mouth: It has a very pleasant and tasty entry, with a silky and agile, enveloping palate, the sensation of fruit is less than on the nose, the wood being more noticeable. It has good acidity and fine, ripe, well-integrated tannins. Medium-long and persistent finish.

Pairing

Psi is ideal to accompany roasted red meats, stews, civet, feathered game, wild game, cured cheeses, acorn-fed Iberian ham and red meats with sauce.

It is recommended to serve at a temperature of 16ºC.
