Preparation and aging

Pazo de San Mauro 2023 is a white wine with Rias Baixas designation of origin resulting from the best grapes from vineyards between 15 and 40 years old. The grapes are planted in semi-vines so that they have the necessary ventilation and are of top quality. The collection is done manually and in 20 kilogram boxes.

It undergoes maceration at a low temperature of approximately 11ºC and alcoholic fermentation for 15 days at 17ºC in stainless steel tanks.
