Elaboration

The harvest is mechanized and transported in boxes of 10 to 15 kg. Vinification begins with a very careful process and with minimal intervention upon entering the winery. The grapes enter the tank practically unsqueezed, ensuring that they do not break, to safeguard the personality of the plot and the character of the vintage. Subsequently, fermentation takes place spontaneously with indigenous yeasts in steel and concrete tanks. Malolactic fermentation occurs in barrels.

On the other hand, 75% of the wine was refined for 8 months in second and third year 500-liter French oak barrels, from the Allier, Vosges and Nevers forests. The rest was refined in concrete tanks. Prior to bottling, they were assembled in terrois.
