Preparation and aging

Pago de los Capellanes Roble 2022 is made with 100% Tempranillo grapes. After the harvest, the Pago de los Capellanes Roble beans are transported to the winery, where they first undergo a brief cold pre-fermentation. A spontaneous alcoholic fermentation then occurs. Payment of the Chaplains Oak is then vatted for about 22 days. During this time, daily pumping over and bazuqueos are carried out, controlling the density, temperature and evolution of the yeasts at all times. After this process, the tanks are bled and a malolactic fermentation takes place at 20º that lasts for a period of 24 days.

Pago de los Capellanes Oak finally rests for 5 months in new French oak barrels before going on the market.
