Preparation and aging

Pago de Carraovejas 2021 is a blend of the varieties 92% Tinto Fino, 5% Cabernet Sauvignon, 3% Merlot. The Pago de Carraovejas grape is selected in the field by the vineyard staff throughout the vegetative cycle of the plant. It is harvested by hand and arrives at the winery in small vibrating stainless steel trailers, which will pamper every movement of the grapes. Destemmed without crushing, in very wide tanks for better extraction of flavors, aromas and color.

Aging for 12 months in French and American oak barrels. Clarification with natural egg white.
