Pago de los Capellanes Crianza 2021 is a sweet and broad red wine. It has been chosen among the 100 best wines in the world according to Wine&Spirits magazine.

Pago de los Capellanes is a family project of winegrowers and producers carried out with the aim of expressing and interpreting each plot through artisanal and timeless wines.

Preparation and aging

The Pago de los Capellanes Crianza red wine is a single varietal 100% Tempranillo grape. Selected harvest at the beginning of October. Once the grapes have been received in the winery, alcoholic fermentation begins in a controlled manner, with the addition of yeast selected from the best vineyards for 30 days, with daily pumping over. Malolactic fermentation is carried out without the addition of bacteria and the winery is tempered at 20ºC for 24 days, controlling the levels of malic acid and lactic acid.

Aging for 12 months, the wine rests in new and 2-year-old French oak barrels with 300 liters of selected grain.

• View: Pago de los Capellanes Crianza has a very intense, bright cherry color, with cardinal rims.
• Nose: The nose is very frank, with a good fruit-wood balance in which vanilla tones blend with very ripe fruit, black and forest fruits. Notes of leather and licorice stand out, typical of the blend of French Oak with the varietal aromas.
• Mouth: Soft, but filling the palate with balanced flavors and also perceiving fine tannins that will contribute to prolonging its life, ending with a finish in the mouth and a long and elegant aftertaste.

The Pago de los Capellanes Crianza red wine is ideal to accompany sausages, roasted red meats, veal round, civet, stews and cured cheeses.

It is advisable to uncork and decant this red wine an hour before consumption, and consume it at a temperature of 16º-18ºC
