La Nieta 2020 , made with 100% Tempranillo grapes with Rioja Designation of Origin.
Preparation and aging
La Nieta 2020 begins its production with manual destemming and rigorous grain-by-grain selection. Cold pre-fermentation maceration at 8º C for 6 days. Fermented in small oak vats with a capacity of 10 hectoliters at 28º C. Stepped 4 times a day during the first 6 days of fermentation and 2 times a day during the remaining 5. Maceration with skins for 14 days. Malolactic in new French oak barrels.
Barrel aging: 18 months in 21 new French oak Bordeaux barrels. Racking every 4 months.
