Description

Essence of Oremus 2008 is a sweet white wine with the Tokaji Designation of Origin (Hungary), produced by the Tokaj-Oremus winery.

It is a wine made from grapes: Furmint, Hárslevelü, Zéta, Sárgamuskotály. 826 bottles of the 2008 vintage have been produced.

Elaboration

The harvest was carried out manually, the Aszú grains were selected, which were of the highest quality. The first step was to let the berries rest for 15 and 20 days in the winery's winemaking room. Next, the weight of the grains causes the extraction of the must, which is taken to 50-liter glass containers where it undergoes a very slow fermentation. After two years the aging process begins, it is transferred to 68-liter barrels called “átalag”, where it continues to adapt. Finally, it rests in the bottle, approximately a decade, to finally go on the market.

Consumption Recommendation

Aszú is one of the few wines that go very well with chocolate. It is a very elegant companion for desserts. Make sure the sweetness of the wine is higher than the sweetness of the dessert. Tokaji Aszú is excellent with several types of cheeses, especially blue cheeses, where it acts as a counterbalance to the richness and saltiness of the cheese. The stronger and richer the cheese, the sweeter the Aszú should be. The most classic pairing of all is foie gras (goose liver). While many associate this delicacy with France, Hungary is the world's leading producer and, of course, makes Tokaji a natural pairing. The wine should be sweet, but not too cloying.

Appellation of origin

The Tokaji Designation of Origin is located in the Tokaj-Hegyalja region in Hungary. The emergence of Tokaji wine is associated with the Hungarian countess Susana Lorántffy (1600-1660). The countess, wife of George Rákóczi I, Prince of Transylvania, owned many lands and vineyards. Lorántffy took care of the vineyards and dedicated himself to teaching his servants cultivation techniques. The consecutive wars between Turks and Germans forced the harvest to be postponed until November, which resulted in a sweet flavor, which since then has been typical in wines with this Designation.

The Esencia de Oremus 2008 wine was created by the Tokaj-Oremus winery. In 1993, three years after the fall of communism, the Álvarez family arrived in Hungary to found Tokaj-Oremus Vineyards and Wineries. Currently, its activities are focused on Tolcsva, where - within the labyrinth of underground cellars that have existed since the 13th century - the new winery was created in 1999. The Álvarez family has developed detailed studies to understand wine, from its production to its history. They have focused on preserving tradition as much as possible in their new winery. To do this, they looked for a local team, together with a local winemaker, to develop the new project within the best located and most symbolic vineyards.

There are six white grape varieties that are approved for Tokaji production, with Furmint, Hárslevelü (also known as Feuille de Tilleul or “Lindenblättriger), and Yellow Muscat or Muscat Lunel (Hungarian: Sárgamuskotály) being the most important. Additionally, Zéta, Kabar and Kövérszölö are approved for Tokaji production, but do not play a significant role.

The grapes for Esencia de Oremus 2008 come from vineyards located at 200 meters above sea level, which cover around 91 hectares and are 13 years old. The climate is characterized by being continental, with dry and relatively warm winters. Abundant rainfall during the 2008 vintage produced early bud break. In addition, the heat and rain in summer and early September contributed to good ripening of the grapes.
