Bodegas Enrique Mendoza has two wineries for the production of its wines: one in Alfaz del Pi and another in Villena, where it produces its quality white and red wines protected under the Alicante DO.

Preparation and aging

Enrique Mendoza Moscatel de la Marina 2021 is a single-varietal Moscatel de Alejandría variety, with deep roots in the Marina area. After the harvest, the clusters are destemmed. Subsequently, the Moscatel de la Marina must macerates at low temperature with its skins to achieve optimal aromatic extraction. The must heading technique is applied, which consists of adding wine alcohol that stops fermentation, achieving the desired sugar level. After these processes, the tanks are bled and the must, without going through any type of pressing, is topped with wine alcohol to achieve the desired alcoholic level.

Finally it is filtered and bottled as quickly as possible to achieve the greatest flavor of the fruit.
