Preparation and aging

Enate Chardonnay Fermented in Barrel 2022 is made with destemmed grapes and introduced into a pneumatic press, where gentle and moderate pressing is carried out. Once the solid residues of the must have been removed by static settling at 8ºC, the clean must undergoes alcoholic and malolactic fermentation in new French oak barrels.

The wine remains in contact with its lees in the same barrels for six months, with fortnightly battonages.
