Bassus Pinot Noir 2021

Bassus Pinot Noir 2021 is a red wine with Designation of Origin Utiel-Requena (Spain), produced by Bodegas Hispano Swissas.

The violet wine, with a hint of French oak wood and a flavor of ripe fruit, is the best accompaniment to semi-cured cheeses and other types of starters.

Elaboration

The Bassus Pinot Noir 2021 is made with 100% Pinot Noir , one of the most elegant varieties on the international wine scene.

This grape adapts very well in Utiel-Requena, the clusters are compact and the berries are small, purplish-black in color.

The best low-production grapes from the Pinot Noir vineyards are selected -density 4,000 plants per hectare-. The grapes are harvested in 15kg boxes. It undergoes a morning harvest so as not to waste the properties of the grapes until they reach the winery.

Once in the winery, they are sent to a cold room where the grapes are kept for 3 days at -10ºC. Then, box by box, it is destemmed and vatted in 400-liter new American oak barrels. A refrigerated stainless steel plate is inserted inside each barrel to manually macerate cold (8ºC) for 4 days.

Subsequently, once the fermentation begins, they let the barrel itself control the temperature until it reaches 26ºC. After 15 days, they lightly transfer the grapes to the pneumatic press. The resulting product is sent to age for at least 10 months in Allier French oak barrels and bottled, lightly filtered.
